In love with her beautiful Vendée region, Mademoiselle Perle takes advantage of her return to Saint-Gilles to get lost in the heart of the beaches, dunes, marshes and forests that sublimate the Atlantic coast. The perfect opportunity to recharge your batteries and enjoy the sweetness of life in the Vendée. For this 2021 vintage, Delphine Cossais uses her brushes to portray Mlle Perle, her muse in the midst of the landscapes that inspire her, by the ocean. Fished at the end of the summer on the coasts of Saint-Gilles-Croix-de-Vie and its region, our vintage sardines are the fruit of a know-how of excellence perpetuated since 1887. These are real vintages to age for up to 10 years, taking care to turn them over every six months. A decade that allows them to tenderize and confit, an essential ritual to appreciate all the qualities of these precious sardines and reveal their aromas. This 2021 vintage is marked by warm and buttery notes that will evolve with age towards hints of hazelnut.
